Hi! I’m London Lopez, the Founder and Owner of 1Bite Pastries, LLC. I was born and raised in Louisville, Kentucky, and I’ve loved baking since I was 15 years old, making treats for my family.
When I turned 16, I wanted a bakery-style decorated tiered cake for my birthday, so I decided to teach myself and make it. That one cake changed everything. It sparked my passion for baking and decorating, and I haven’t stopped experimenting since. Over time, that passion grew into the single-serving desserts my customers enjoy today, especially my popular chess bars.
While living in San Antonio, Texas, I took professional cake-decorating classes through Wilton Industries, Inc., and later worked as a cake decorator at Kroger during college. Each experience helped me grow my skills and deepen my love for baking.
I pursued an accounting degree at the University of Kentucky because I wanted to understand the business side of owning a bakery. Opening my own business was always the dream, and in September 2022, that dream became a reality when I incorporated 1Bite Pastries in Kentucky.
My bakery focuses on delicious, single-serving desserts because I believe that enjoying sweets should feel joyful, not guilty. My motto is simple: “Savor the desserts you love in moderation.”
Giving back is also an important part of my business. I choose to donate 10% of my income to support my local church and community initiatives that make a positive impact. It’s my way of sharing gratitude and pouring love back into the community that has supported me.
